commercial kitchen equipmentAn oven is a thermally insulated chamber used for heating, baking, or drying. Many types exist on the market, each with unique features. Here shares some type of commercial oven for reference.

Types of Ovens:

Conventional: Uses stationary heat (electric coils or gas flames). And they have below different as well:

1. Electric Coils Heat.

Electric ovens use heating elements, which are coils made of a high-resistance metal alloy like nichrome. When an electric current passes through these coils, they heat up and emit radiant heat.

These coils are usually located at the bottom and sometimes at the top of the oven cavity. The bottom coil is primarily used for baking, while the top coil can be used for broiling.

The heat from the coils rises and circulates within the oven, cooking the food. However, the heat distribution can be uneven, with the area near the coils being hotter than other parts of the oven.

2. Gas flames

Gas ovens use burners that produce flames when gas is ignited. The flames heat the oven’s interior, typically through a metal plate or a series of tubes that distribute the heat.

The gas burner is usually located at the bottom of the stainless steel gas oven. Some models may have additional burners or heating elements at the top for broiling.

Similar to electric ovens, the heat from the gas flames rises and circulates within the oven. The heat distribution can also be uneven, with the bottom of the oven being hotter than the top.

lConvection oven: Similar to conventional, but with a fan for air circulation, leading to even cooking and faster times.

A convection oven is similar to a conventional oven in many ways, but it features an additional component: a fan. This fan is designed to circulate hot air throughout the oven cavity, creating a more uniform temperature environment. The circulation of air helps to distribute heat evenly around the food, which can lead to more consistent cooking results. Because the hot air is constantly moving, convection ovens can often cook food faster than conventional ovens. The fan also helps to remove moisture from the oven, which can result in crisper, browner surfaces on baked goods and roasted meats. Overall, the presence of the fan in a convection oven enhances the cooking process, making it more efficient and effective for a variety of dishes.

Microwave: Uses microwave radiation for quick cooking.

A microwave oven is a kitchen appliance that uses microwave radiation to heat and cook food quickly. Microwaves are a form of electromagnetic radiation with wavelengths ranging from about one meter to one millimeter. In a microwave oven, an electron tube called a magnetron generates microwaves, which are then directed into the cooking chamber.

Deck oven: Features a flat, stationary cooking surface (deck), ideal for bread and pizza.

A deck oven is a type of commercial oven that features a flat, stationary cooking surface known as a "deck." This design is particularly well-suited for baking bread and pizza, as well as other baked goods. The deck, typically made of stone or metal, retains and conducts heat efficiently, creating a consistent and high-temperature environment that is ideal for achieving crispy crusts and even baking.
